Ingredients:
- 1.5 kg pot-au-feu meat (various cuts such as chuck, ossobuco, oxtail)
- 4 carrots, cut into chunks
- 4 leeks, cut into chunks
- 4 potatoes, peeled and cut into large chunks
- 1 small green cabbage, quartered
- 4 turnips, cut into chunks
- 1 onion, studded with cloves
- 4 garlic cloves, crushed
- 2 bay leaves
- A few sprigs of thyme
- Salt and black pepper to taste
- Beef stock (about 2 to 3 liters)
Instructions :
- Place the pieces of stew meat in a large pot and cover with the beef stock.
- Bring to the boil, then reduce heat to simmer for about 1 hour. Skim regularly to remove impurities.
- Add the carrots, leeks, potatoes, kale, turnips, onion, garlic, bay leaf and thyme to the pot.
- Season to taste with salt and pepper. Continue to simmer for about 1 to 1.5 hours, until the vegetables are tender.
- Remove the pieces of meat from the pot and cut into slices.
