The famous Pot-au-feu!

Pot-au-feu is a classic, comforting dish, perfect for chilly days. Here's a simple and delicious recipe for pot-au-feu with beef broth:

Ingredients:

  • 1.5 kg pot-au-feu meat (various cuts such as chuck, ossobuco, oxtail)
  • 4 carrots, cut into chunks
  • 4 leeks, cut into chunks
  • 4 potatoes, peeled and cut into large chunks
  • 1 small green cabbage, quartered
  • 4 turnips, cut into chunks
  • 1 onion, studded with cloves
  • 4 garlic cloves, crushed
  • 2 bay leaves
  • A few sprigs of thyme
  • Salt and black pepper to taste
  • Beef stock (about 2 to 3 liters)

Instructions :

  1. Place the pieces of stew meat in a large pot and cover with the beef stock.
  2. Bring to the boil, then reduce heat to simmer for about 1 hour. Skim regularly to remove impurities.
  3. Add the carrots, leeks, potatoes, kale, turnips, onion, garlic, bay leaf and thyme to the pot.
  4. Season to taste with salt and pepper. Continue to simmer for about 1 to 1.5 hours, until the vegetables are tender.
  5. Remove the pieces of meat from the pot and cut into slices.
  6. Arrange meat and vegetables on individual plates. Serve with a little hot broth.
  7. Garnish with chopped fresh parsley if you like, and serve this delicious, comforting pot-au-feu.
